MATCHA OATMEAL COCONUT WAFFLES?! Say what?
Seriously, these waffles came out so freaking good. Another perk besides tasting amazing is that they’re gluten-free and dairy-free. Hollaaaa!
You know I’m always willing to try anything matcha so when I heard of matcha waffles I knew I had to try and make a healthier version. At first, I did try other gluten-free flours with matcha but I wasn’t completely in love. Then I remembered my recipe for matcha overnight oats and how that worked well together. That’s when I had my LIGHT BULB moment. Oatmeal with matcha was the perfect combo and of course I added coconut milk. Matcha and coconut are a match made in heaven.
MATCHA + GF OATMEAL + COCONUT = real damn delicious!
The goods needed:
1 cup GF quick cooking oats
2 tsp Baking soda
1 tsp matcha (http://amzn.to/2xRc66B)
1/2 cup Coconut milk
1/2 tsp Vanilla extract (http://amzn.to/2x7DfDH)
blend together in nutribullet or Vitamix
Used ghee to grease the waffle maker
Cook thoroughly then choose any toppings you’d like.
I topped mine with Siggi’s yogurt, shredded coconut, and cinnamon
